Pop the cork energy without the fuss. The French 75 is bright, bubbly and deceptively strong. Gin, lemon and sparkling wine, batched for the Cooler Keg so every pour feels like a celebration.

Ingredients

  • 3550 ml sparkling wine (a solid Prosecco works a treat)
  • 1180 ml gin (Botanist if you want premium, or a good value London dry)
  • 590 ml lemon simple syrup
  • 590 ml fresh lemon juice
  • 470 ml water
  • Lemon twists for garnish (optional)

Directions

  1. If making lemon simple syrup, warm equal parts sugar and water with peels from 3 lemons per 250 ml water until dissolved (about 5 minutes). Cool completely.
  2. Strain all ingredients into a keg, stir well, and close the lid.
  3. Pressurise to about 25 psi.
  4. Chill overnight in the fridge and freeze the ice packs. For best carbonation, keep at 25 psi for 2 to 3 days, topping up pressure daily.
  5. When ready to serve, load ice packs and keg into the Cooler Keg, release pressure, then set to 8 psi.
  6. Serve in a flute or coupe with a lemon twist.
