Sparkling Margarita (Aussie Edition)
This isn't your average margarita. This is the one that keeps the line moving at every summer barbie. Fresh lime, tequila, and triple sec get hit with max CO2 so it pours like a dream straight from the keg. Bright, punchy, and properly refreshing. Exactly what you want when the mercury climbs.
Ingredients
- 3 L Tequila
- 1 L Simple Syrup
- 1 L Fresh Lime Juice (strained)
- 1 L Triple Sec (Cointreau or Grand Marnier also ripper)
- Tajin, salt, or sugar to rim glasses (optional)
- Fresh lime slices to garnish
Directions
- IMPORTANT: Make this at least 3 days ahead so it can properly carbonate.
- Combine all ingredients in the keg and stir well. Strain the lime juice first.
- Connect CO2 and pressurise to about 25 psi. Purge the headspace a few times to remove oxygen.
- Chill in the fridge for 3 to 4 days. Re-pressurise to 25 psi once a day.
- Night before: freeze your ice packs.
- 3 hours before serving, load the keg and ice packs into the Cooler Keg.
- Just before serving, release all pressure from the keg.
- Reconnect CO2 and set to 8 psi for serving.
- Pour over ice into Tajin, salt, or sugar-rimmed glasses. Garnish with lime.
